So that's how it's done! I have always slid the omelette out of the pan until about half was on the plate then tipped the pan over so the rest of the omelette folded over the first half. However, I will be trying this technique in future.
My family likes omelettes to be well cooked so when the underneath is cooked, I have to put the pan under a grill so the egg cooks and rises on the top side .

That used to be almost my favorite meal!
In Japan there was a dish that was outstanding. It was called "Omu Rice"
Use warmed left over fried rice to make a ball. Add tomato/gravy sauce to taste. Wrap it in a flat omelet and serve with the sauce over it..
Another good way to make a family omelet is to do a fluffy omelet in a cast iron pan to cook one side. Then add the cheese and other nice things and finish it without turning it over in a preheated oven broiler. The cast iron pan should be a one piece without a separate handle.
